Melon Granitas

It’s late April and I’ve already have Summer on my mind. Not really surprising, since we live in Orange County. All I can think about is spending day after day at the beach with my family, which this year will include our new little guy. And with summer, comes lots of requests (almost always granted) for Icees, Slurpees, Otter Pops, shakes, smoothies, popsicles, and the list goes on. So I figured I would get everyone in the same mood by making these Melon Granitas, which were incredibly fun and easy to make. Not to mention a much healthier alternative to the treats listed above.

I went with three of my favorite summer fruits – watermelon, cantaloupe and honeydew melon. I lucked out and picked out three that were perfectly ripe and sweet, perfect for granitas. Cut ’em up, added a little light agave syrup, tossed them in the Blendtec, then classed them all up by pouring them in styrofoam cups. What’s more summery then fruit and styrofoam anyway, right? Brings me back to childhood.

The boys loved them, especially Cole. He came home from his Little League game tonight and ate a watermelon one, patiently scraping it bite by bite until the cup was clean. At that point, I gave myself a pat on the back for keeping him relaxed and busy for 30 minutes as he scraped and scraped, without one complaint. I must have done something right!

I made about 8 of these bad boys, and if for some reason a couple don’t get eaten by the end of the weekend, I will gladly use them in a breakfast smoothie next week. Hoping that’s the case actually.
